Beetroot

Mix of beetroot varieties in yellow, white, red and candy-striped. Delicious as primeurs, eat them lightly boiled with a knob of butter. Preferably boil red-coloured beetroots with some of the stem and the whole skin left on so that the red juice does not escape. Don’t plant too early; frost can cause the plant to flower. Best grown in nutrient-rich, humus-rich soil that retains moisture. Thin out early. Loosen the soil around the plants.
