Sweet Fennel

A classic crisp and firm fennel with a wonderful flavour reminiscent of liquorice. Sweet Fennel ‘Preludio’ is excellent with fish dishes and the seeds are also good for flavouring bread. You can grow fennel almost all year round! In spring, sow fennel sparsely in damp seed compost, then transplant one plant per pot of fertilised soil. Keep the plants in a bright, cool spot and transplant outside after frost. Remember that fennel is very sensitive to frost, so cover it with a fibre cloth! You can continue growing fennel over the summer by direct sowing in warm soil – make sure you keep the seedlings moist until they germinate. Further into the autumn, you can cover the fennel with fibre cloth if there is a risk of frost. Another good way to protect against the cold is to earth in the base of the tuber.
