Purslane is rich in omega 3 and vitamin E. The mildly acidic leaves are used in soups, salads or cold sauces with yoghurt. Can also be frozen. Pick leaves gradually. Leave a few leaves at the base of the plant and it will continue to grow. Thrives in nutrient-rich, humus-rich and sandy soil in a warm spot. Keep soil moist.
